This modern experimental wine cellar is the product of a continued collaboration between the City of Turin, the School of Agriculture of the University of Turin (now DIVAPRA) and the Bonafous Institute for Agro- Technology. Training, research and production are the three words that sum up the business, which primarily seeks to develop the historic vineyard, in particular, to enhance its knowledge and skills in wine production using the Collina Torinese varieties (Freisa, Bonarda and Cari) and to identify the agronomy techniques most suitable for their cultivation.
In 2000, through collaboration with the Province of Turin, an ampelography collection was created with lesser and rare grape varieties in order to preserve genetic biodiversity. Recently, the Piedmont Vintners invested in the facility to make experimental micro-wines.
